Microbiology of Food
Course: Food Science and Human Nutrition (FS HN) 521X,

This course deals with the identification, enumeration, and characterization of bacteria, yeasts, and mold associated with foods and food processing. Effects of physical and chemical agents on micro-organisms will be studied. Microbiological problems in food spoilage, food preservation, food fermentation, and food-borne diseases will be discussed. This course is Web-based lecture course for off-campus distance education students.
Prerequisite: microbiology with laboratory, permission of the dept. Carrie Brus 294-1862/cbrus@iastate.edu
